Grilled cheese sandwiches are traditional comfort food. We’ve added a few vegetables for a healthier twist on an old favorite.
Ingredients
1/2 tablespoons olive oil (optional)
1 cup sliced fresh mushrooms
2 tablespoons chopped green onion
2 tablespoons shredded carrots
2 tablespoons water
1/2 teaspoon lemon juice
1/8 teaspoon garlic powder
2 slices tomato
2 slices avocado
2 slices toasted whole wheat bread
2 slices part-skim mozzarella cheese, cut into fourths
Directions
Coat a non-stick skillet with cooking spray and/or add 1/2 tablespoon olive oil to skillet and heat to medium.
Add mushrooms and next 5 ingredients to pan. Saute until crisp-tender. Drain.
Place tomato and avocado slices on toast. Spoon mushroom mixture over tomatoes/avocados. Top each with 4 cheese pieces.
Broil 5 1/2 inches from heat for 2-3 minutes or until cheese melts. Serve immediately.
