Make this delicious cobbler any time of year with your favorite frozen berries.
Ingredients:
Berry filling:
4 cups assorted fresh berries (blueberries, strawberries, raspberries)
2 tsp. fresh lemon juice
⅓ cup sugar (may decrease sugar as preferred)
2 tbsp. flour
Topping:
¾ cup flour (may substitute with ¼ cup whole-wheat flour + ½ cup all-purpose flour)
¼ tsp. salt
1 ½ tsp. baking powder
1 tbsp. sugar
2 tbsp. unsalted butter, chilled and cut into small pieces
½ cup heavy cream (may substitute with ⅓ cup low fat buttermilk + 2 tbsp. canola oil)
Directions:
Preheat oven to 400 degrees. For filling: Place berries in bowl, add lemon juice and mix gently. Add flour and sugar and set aside.
For topping: In food processor with steel blade, process flour, baking powder, sugar, butter and salt until pea-sized. Slowly add cream until dough comes together.
Fill 2-12 ounce ovenproof bowls with berries. Dot fruit with dough in clumps. Sprinkle with 1-2 tsp. additional white sugar.
Bake 20 minutes or until bubbly and golden brown.
